Somehow one or two basil plants came up crossed this year between purple and green. The result are those stunning speckled leaves.
Peach, Basil & Jalapeno Toast
1 slice of bread
1/3-1/2 cup ricotta cheese
1 peach sliced
1/2 jalapeno, thinly sliced
basil leaves, torn or thinly sliced
1 Tbsp white balsamic vinegar
1/2 Tbsp olive oil
Toast your bread. While it's toasting, let the peach and jalapeno slices marinate in the vinegar and olive oil. Top the toast with the ricotta cheese, then layer on top the peaches and jalapeno. Top with basil leaves. Enjoy.
