This cocktail is a real pleasure after a hard, hot day on the farm. It's sweetened with honey, that's been infused with thyme, and then brightened up with lemon juice. Mix in some bourbon, top with club soda and put your feet up. For a delicious mocktail, simply leave the bourbon out. Sometimes we also mix a bit of the syrup into chilled Perrier to jazz it up.
Honey Thyme Syrup
1/2 cup honey
1/2 cup water
5-6 springs thyme
Bourbon Cocktail
2 oz bourbon
2 oz fresh lemon juice
3/4 oz honey thyme syrup
ice
2 oz club soda
For the syrup, combine the honey and water in a small saucepan. Bring the mixture to a low boil, add the thyme, and simmer for 15 minutes. Remove from heat, discard thyme, and chill syrup.
Combine bourbon, lemon juice, and syrup in a cocktail shaker half filled with ice. Cap and shake for 30 seconds. Pour into a glass filled with ice and top with club soda.
Store extra syrup in an airtight container in the fridge for up to 3 weeks.
