Black Bean Dip

Caitlin is obsessed with beans and is always looking for new and delicious ways to enjoy them. This recipe is super easy and comes together in a few minutes. The dip can be eaten with veggies or crackers, slathered on a sandwich, or added to your favourite taco!

The key to this recipe is coriander seed, whole seeds specifically. Please source some whole coriander seeds (bulk barn) and grind them yourself, the taste and aroma is amazing! Unfortunately the pre-ground stuff from bulk barn isn't going to work. Also, cilantro leaf and coriander seed, through they come from the same plant, are two very different things.

Black bean Dip

1 14oz can of black beans, rinsed

1 tablespoon chopped garlic scapes in oil

1 tsp olive oil (or other oil)

1 lime, juiced

1 tablespoon coriander seeds, ground

salt and pepper to taste

Blend all the ingredients in a food processor until smooth. Add a little more oil or lime if too thick.
