This is a really delicious way to use up you garlic, dill and cucumber! We like to have it on souvlaki but it's good on pretty much anything!
Tzatziki
½ cup finely grated cucumber, drained
1 cup Greek yogurt
1 tablespoon fresh lemon juice
½ tablespoon extra-virgin olive oil
1 garlic clove, finely grated
¼ teaspoon sea salt
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh mint, optional
Place grated cucumber in a towel or squeeze out as much liquid in your hands as possible.
In a medium bowl, combine the yogurt, cucumber, lemon juice, olive oil, garlic salt, dill, and mint (if using). Chill until ready to use.
