What to do with them? How to Store? Recipes below!

 

tomatoes - whatever you do, don't put tomatoes in the fridge!

(store at room temperature, ideally in a single layer, out of the sun.)

 

zucchini - check out this list of 31 best zucchini recipes. These zucchini pickles look good.

(store in the fridge in a plastic bag)

 

carrots – you know the drill. Roast them, sauté them, juice them, cut them into sticks and dip into something tasty.

(Remove the carrot tops (they leach moisture from the roots) before storing them both in plastic bags in the fridge)

 

beans – beans are easily one of our most cherished vegetables. We suggest steaming or boiling them for a few minutes and finishing them off with a little butter. or have you tried our basil vinaigrette? recipe below

(store in a plastic bag in the fridge)

 

basil– oh boy! there are so many awesome things that can be done with a bit of basil. Pesto, pasta dishes, vinaigrette, or simply enjoy with your fresh tomatoes!

(store on the counter or in the fridge, in a glass with a bit of water in the bottom )

 

parsley – chop and spread on a baking sheet, let freeze and then transfer to a container and store in the freezer. fresh parsley all year round.

(store in a glass with some water at the bottom, in the fridge)

 

kale – show you kale some love, give it a little massage to make it more tender. Did you know it freezes really well? Use later in smoothies!

(store in the fridge in a plastic bag)

 

garlic – enjoy in all your favourite dishes! see some recipe ideas below.

(store it in a warm-ish, dry, dark place for best results)


eggplant – woohoo, Caitlin's favourite! When you're ready to cook, remove the top and then use the rest. The skin is edible. I like to chop it up with a bunch of other veggies (beans, kale, zuc, herbs) and make a little stirfry. Add scrambled egg to make a great veggie-packed breakfast. see below.

shishito peppers – usually a mild, thin-walled pepper. On occasion you'll get one that is a little spicy, so look out!
